Air Fryer Lemon Potatoes
Ingredients:
– 1 bag baby potatoes (about 1.5 lbs or 680 g)
– 1/2 lemon, juiced
– 1 tsp dried oregano
– 2 tsp salt
– Fresh parsley or crumbled feta (optional, for garnish)
Instructions:
1. Boil the Potatoes:
– Place the baby potatoes in a large pot and cover with water.
– Bring to a boil over high heat, then reduce to a simmer and cook for about 10-12 minutes, or until the potatoes are fork-tender.
– Drain the potatoes and let them cool slightly.
2. Prepare for Air Frying:
– Cut the boiled potatoes into halves or quarters, depending on their size.
– In a large bowl, toss the potato pieces with olive oil, lemon juice, dried oregano, and salt until evenly coated.
3. Air Fry the Potatoes:
– Preheat the air fryer to 400°F (200°C) if your model requires preheating.
– Place the seasoned potato pieces in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
– Cook for 12-15 minutes, shaking the basket halfway through, until the potatoes are crispy and golden brown.
4. Garnish and Serve:

– Garnish with fresh parsley or crumbled feta if desired.
