Easy French Onion Meatballs
Ingredients:
1. Meat
• 1 lb ground chicken
• 3 large onions (white, yellow, or red), thinly sliced
• 3 garlic cloves, minced
• 2 tablespoons fresh parsley, chopped
• 1 teaspoon fresh thyme, chopped
• 3 fresh thyme sprigs
3. Refrigerated
• 1 large egg
4. Canned Goods
• 1 3/4 cups beef or chicken stock
5. Condiments
• 2 tablespoons balsamic vinegar
6. Baking & Spices
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon salt
• 1 tablespoon corn flour (cornstarch)
7. Oils & Vinegars
• Cooking oil spray
• 3 tablespoons olive oil
8. Bread & Baked Goods
• 1/4 cup breadcrumbs
9. Dairy
• 1 1/4 cups mozzarella or Gruyère cheese, shredded
Instructions:
1. Prepare the Meatballs:
• In a large mixing bowl, combine the ground chicken, minced garlic, fresh parsley, chopped thyme, egg, breadcrumbs, salt, and black pepper. Mix until well combined.
• Form the mixture into small meatballs (about 1 to 1.5 inches in diameter).
2. Cook the Onions:
• Heat 3 tablespoons of olive oil in a large skillet over medium heat.
• Add the sliced onions and fresh thyme sprigs. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.
• Add the balsamic vinegar to the onions and stir, cooking for another 2 minutes until the vinegar is absorbed. Remove the thyme sprigs and set the onions aside.
3. Cook the Meatballs:
• In the same skillet, spray a little cooking oil and add the meatballs. Cook over medium heat, turning occasionally, until the meatballs are browned on all sides and cooked through, about 8-10 minutes.
4. Make the Sauce:
• Once the meatballs are cooked, return the caramelized onions to the skillet.
• Sprinkle the corn flour over the onions and meatballs, stirring to coat evenly.
• Slowly pour in the beef or chicken stock, stirring constantly until the sauce thickens and coats the meatballs, about 2-3 minutes.
5. Add the Cheese:
• Sprinkle the shredded mozzarella or Gruyère cheese over the top of the meatballs.
• Cover the skillet and let the cheese melt, about 2-3 minutes.
6. Serve:
• Serve the French Onion Meatballs hot, garnished with additional fresh parsley if desired.
• Enjoy them on their own, over pasta, or with a side of crusty bread to soak up the delicious sauce!
