4 large russet potatoes
2 cups cooked chicken, shredded
8 oz cream cheese, softened
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, sliced
Salt and pepper to taste

Directions:

Step 1: Bake the Potatoes
Preheat your oven to 400°F (200°C). Scrub the potatoes clean and dry them. Rub each potato with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.

Step 2: Prepare the Chicken Mixture
In a large bowl, combine the shredded chicken, cream cheese, ranch seasoning mix, cheddar cheese, crumbled bacon, and green onions. Mix until well combined. Season with salt and pepper to taste.

Step 3: Stuff the Potatoes
Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and carefully scoop out a portion of the insides, leaving enough to maintain the potato’s shape. Add the scooped-out potato to the chicken mixture and stir to combine.

Step 4: Fill the Potatoes
Fill each potato shell with the chicken mixture, mounding it slightly on top.

Step 5: Bake Again
Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes until the filling is hot and the tops are golden and bubbly.
