Instructions:

1. Cook the Bacon:

– In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set it aside on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces.

2. Prepare the Base:

– Discard excess bacon grease, leaving about 1 tablespoon in the pot. Add the diced onion and cook over medium heat until translucent, about 4-5 minutes.

– Add the minced garlic and cook for an additional 1 minute, until fragrant.

3. Add Vegetables:

– Stir in the diced potatoes, zucchini or yellow squash, and fresh thyme. Cook for 2-3 minutes.

– Pour in the chicken broth and bring the mixture to a boil. Reduce heat and let it simmer for 10-15 minutes, until the potatoes are tender.
