Instructions:

1. Prepare the Meatballs:

• In a large mixing bowl, combine the ground chicken, minced garlic, fresh parsley, chopped thyme, egg, breadcrumbs, salt, and black pepper. Mix until well combined.

• Form the mixture into small meatballs (about 1 to 1.5 inches in diameter).

2. Cook the Onions:

• Heat 3 tablespoons of olive oil in a large skillet over medium heat.

• Add the sliced onions and fresh thyme sprigs. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.

• Add the balsamic vinegar to the onions and stir, cooking for another 2 minutes until the vinegar is absorbed. Remove the thyme sprigs and set the onions aside.

3. Cook the Meatballs:

• In the same skillet, spray a little cooking oil and add the meatballs. Cook over medium heat, turning occasionally, until the meatballs are browned on all sides and cooked through, about 8-10 minutes.

4. Make the Sauce:

• Once the meatballs are cooked, return the caramelized onions to the skillet.

5. Add the Cheese:

• Sprinkle the shredded mozzarella or Gruyère cheese over the top of the meatballs.
